Fonterra new mozzarella plant is timed to coincide with increased demand for cheese products in China.
Its just-completed mozzarella plant at Clandeboye in south Canterbury will produce enough cheese to top more than 300 million pizzas a year.
The mozzarella plant is the first of its kind in the world, the co-operative says. Frozen natural shredded mozzarella is made straight from milk in one day, rather than two months taken by conventional mozzarella processes.
